SOUTHWEST CHICKEN CHILI 
1 lb. boneless, skinless chicken
1 can black beans, drained & rinsed
1 can pinto beans, drained & rinsed
1 can corn, drained
1 can rotel, undrained
1 can crushed tomatoes, undrained
1 green chile, finely diced
minced red or white onion
1 packet taco seasoning
cheddar cheese, shredded
sour cream
tortilla strips

Brown chicken in skillet until fully cooked then cube and add to crock-pot. Drain and rinse beans, add to crock-pot. Drain corn and add to crock-pot. Add rotel and crushed tomatoes to crock-pot. Do not drain. These juices are needed. Mince onion and dice pepper and add to crock-pot. Lastly, add taco seasoning and evenly coat all ingredients in crock-pot. Cook on low for 4+ hours. Top with shredded cheddar cheese, sour cream and tortilla strips and enjoy!
