MERIDEL'S SWEET AND SOUR
MEATBALLS
 
1 lb. ground beef or veal
1 garlic clove, minced
1 tbsp. soy sauce
2 eggs, slightly beaten
2 tbsp. cornstarch
1/4 c. vinegar
2 tsp. soy sauce
1/2 c. green pepper strips
3/4 c. minced celery
1/2 c. dry bread crumbs
1 tsp. salt
1/4 c. sugar
1 c. chicken broth
1 c. pineapple chunks
1/2 c. pineapple syrup

Combine beef, celery, garlic, bread crumbs, soy sauce, salt and eggs. Shape into 1" balls. Brown slowly but thoroughly. Add fat if needed. Blend sugar and cornstarch; stir in chicken broth, vinegar, pineapple syrup and 2 teaspoons soy sauce.

Drain excess fat from meatballs. Add sweet sour mixture. Cook, stirring until sauce is clear. Cover and simmer about 15 minutes. Add green pepper and pineapple. Heat through. Serve over cooked rice or chow mein noodles. Also may be served over mashed potatoes. Makes 6 servings.
