BRAISED FRESH GARDEN ZUCCHINI 
1 lb. fresh zucchini (or 2-10 oz. frozen pkgs.)

A:

1/4 c. olive oil
1 c. chopped onions
2 cloves crushed garlic
1 bay leaf

B:

Salt, pepper, Accent to taste
1/2 tsp. oregano
1 tbsp. parsley
1/2 c. chicken stock
1/4 tsp. crushed red pepper

1. Slice and wash zucchini - drain.

2. In 10 inch skillet saute A ingredients for 5 minutes.

3. Add sliced zucchini and B ingredients. Mix well.

4. Cover skillet, bring to a boil and simmer 12-15 minutes until tender.

5. Garnish with chopped parsley.

NOTE OF IMPORTANCE: This is a master recipe - any vegetable can be braised in a similar manner. String beans, spinach, cauliflower, brussel sprouts, cabbage, broccoli are very popular some times for fresh vegetables. The simmering time may be 20-25 minutes according to the season.
