CANNED GARDEN VEGETABLE SOUP 
4 qt. chopped tomatoes
1 med. head cabbage, chopped
3 qt. sliced carrots
1 bunch celery, chopped
3 onions
3 peppers
1/4 c. canning salt
1/4 c. sugar

Almost cover the above with water and simmer 1 hour. Put into sterilized jars and process 20 minutes in hot water bath or can be frozen. Add to cooked beef and broth for a good soup.

When I made this I forgot to add the water. Still turned out wonderful. I canned it in quart jars. When I use it now, one quart jar of soup base will make about 1/2 gallon of soup. Just add plenty water and broth. I will make this every year from now on. We love soup and love the fact that it is not chuck full of preservatives, and so easy to make. Thanks for sharing

I've made this the last two years and love it. I will be making this every year. I use all the vegetables from my garden depending on what I have growing (tomatoes, peppers, cabbage, onion, potatoes, zucchini, carrots, celery, peas, corn, beans, etc). It tastes so good and makes for such an easy meal throughout the year.
