CHOCOLATE CHIP OATMEAL CAKE 
1 3/4 c. boiling water
1 c. oatmeal
1 c. packed brown sugar
1 c. sugar
1/2 c. butter
3 eggs
1/2 tsp. vanilla
1 3/4 c. all purpose flour
1 tsp. baking soda
2 tbsp. cocoa
1 tsp. cinnamon
1/4 tsp. salt
1 pkg. (12 oz.) chocolate chips
3/4 c. chopped walnuts
1/2 c. coconut

In mixing bowl, pour water over oatmeal. Allow to stand 10 minutes. Add sugars and butter, stirring until the butter melts. Add eggs, one at a time, stirring well after each. Sift together dry ingredients. Add to batter and mix well. Add vanilla. Pour into a greased 9 x 13 inch pan. Add coconut and swirl into batter with a knife. Sprinkle top of cake with chocolate chips and nuts. Bake at 350 degrees for about 35 to 40 minutes or until toothpick inserted comes out clean.
