LINGUINE WITH SPINACH SAUCE | |
1/4 c. olive oil 1/4 c. butter 1 lg. onion, sliced 2 cloves garlic, crushed 1 (10 oz.) pkg. frozen chopped spinach 1 tsp. basil 1/2 tsp. salt 1/2 c. grated Parmesan cheese 1. Heat oil and butter in pan. Add onion, garlic and spinach (frozen). Cover, reduce to simmer and cook about 10 minutes. 2. Cook 1 pound linguine; drain. 3. Mix sauce, breaking up spinach. Season with basil and salt. Simmer 5 minutes. Add cheese. Mix well. Serve immediately. Yield: 6 to 8 side dishes or 4 to 6 main dishes. |
