BICK'S BUTTERMILK BRAN MUFFINS
WITH RAISINS AND NUTS
 
4 c. bran cereal
3 c. whole wheat flour
3 tsp. baking soda
1 tsp. salt
1 c. vegetable oil
1 qt. buttermilk
1 c. molasses
2 eggs
1 c. walnut pieces
1 c. raisins

In a large bowl, combine bran, flour, baking soda, salt and mix, then ADD the walnuts and raisins. In a separate bowl, combine 1 cup boiling water, 1 cup molasses and 1 cup vegetable oil. In a separate bowl, beat eggs lightly; add buttermilk and stir thoroughly.

Into the large bowl containing the flour, ADD the water-oil-molasses mixture; stir to mix. Then ADD the buttermilk mixture. When all are combined, spoon in muffin pan using paper cups (makes about 3 dozen). Preheat oven to 400 degrees and bake for 20 minutes. Cool on rack for 5 minutes.
