OATMEAL REFRIGERATOR COOKIES 
1 c. shortening
1 c. brown sugar
1 1/2 c. flour
1 c. white sugar
1 c. coconut
1 tsp. vanilla
1 tsp. salt
1 tsp. baking soda
2 eggs
3 c. quick cooking oatmeal

Cream shortening with white and brown sugar. Add eggs and vanilla. Add remaining ingredients and mix well. Shape into a long roll about 2 1/2 inches in diameter. Wrap in Saran wrap or wax paper. Chill for several hours or overnight. Slice as thin as possible. Bake on ungreased cookie sheet at 350 degrees for 10 minutes.

Variation: Add 1 teaspoon cinnamon and 1 tablespoon grated orange peel. Yield 5 to 6 dozen.
