REFRIGERATOR NO BAKE COOKIES | |
1/2 cup coconut oil 1/2 cup almond milk (flavored or not) 1 cup sugar 1 cup honey 1/2 cup dark cocoa 1 tsp. vanilla 1/2 cup coconut flakes 1/2 cup peanut butter (plain or crunchy) 3 cups oatmeal Soften coconut oil, mix almond milk, sugar, honey, cocoa, vanilla in a pan on the stove, stir and bring to a boil. Remove from burner and add coconut flakes and peanut butter; stir till mix is smooth and add oatmeal, Stir till well mixed. Take cookie sheet with parchment paper on it. With a large cookie scoop, put mix onto cookie sheet and with a fork press down to flatten a little. Put in refrigerator until serving time. They need to be kept in refrigerator or they will be too soft. Makes 16-18 cookies or 24 or more if you use a small scoop. Submitted by: Dan |
