BROCCOLI AND RICE CASSEROLE 
1/2 c. butter
1 (10 oz.) pkg. frozen chopped broccoli
1 med. onion, chopped
1 can cream of chicken soup
1/2 c. milk
1/2 c. cheese mixture or Velveeta cheese
1 1/2 c. Minute Rice

Melt butter, add broccoli and onion in frying pan. Partially cook and thaw. Add cheese, soup and milk. Make rice (a little over 2 servings). Remove from heat - add rice, place in large casserole dish (1 1/2 quart) and bake at 350 degrees for 30 minutes.
