BROCCOLI, RICE AND CHEESE
CASSEROLE
 
2 tbsp. butter
1/2 c. onion, diced
1/2 c. celery, diced (optional)
1 can cream of chicken soup (may use 1/3 less salt variety)
1 can cream of mushroom soup (may use 1/3 less salt variety)
1 (8 oz.) jar processed cheese spread (like Cheez Whiz)
1 (10 oz.) pkg. frozen chopped broccoli, steamed
3 c. rice, cooked (can use regular or wild rice)
Paprika

Saute onion and celery in butter until tender. Mix with soups, cheese, broccoli and 1 cup of the rice. Grease a large casserole dish and line with remaining rice. Add broccoli mixture and sprinkle with paprika. Bake at 350 degrees for 20 minutes or until bubbly. Makes 6-8 servings. Note: If you want to make this into a main dish, mix in 2 to 3 cups cooked, diced chicken or turkey.
