CHINESE CHICKEN SALAD 
4 oz. Mei Fun (rice sticks)
1 lg. head lettuce
1/2 lb. cooked chicken, chopped
6 green onions, chopped (optional)

Deep fry Mei Fun for just a second in very hot oil. Drain on paper towel. Combine lettuce, chicken, and onion and chill. Just before serving, add Mei Fun and dressing. Mix well.

Dressing:
2 tbsp. sugar
2 tsp. salt
1/2 tsp. black peeper
1 tsp. sesame oil
1/4 c. salad oil
1/4 c. white wine vinegar

Combine dressing ingredients and blend in blender.
