PINEAPPLE UPSIDE DOWN CAKE 
2 tbsp. butter
1/2 c. brown sugar
4 pineapple slices, well drained
6 whole cherries, cut into fourths
1/4 c. sifted, enriched flour
1/2 c. sugar
2 tsp. baking powder
1/2 tsp. salt
1/3 c. shortening
1/2 c. minus 1 tbsp. pineapple syrup

Melt butter in 8 x 8 x 2 inch pan. Stir in brown sugar and put in oven to melt while mixing up cake. Sift dry ingredients together over softened shortening and add remaining ingredients. Beat two minutes. Place pineapple slices in the butter and brown sugar mixture in the pan. Center cherries in the middle of the slices. Pour cake batter over the pineapple and bake at 375 degrees for 45 minutes. Let stand 5 minutes and turn upside down.
