PINEAPPLE UPSIDE-DOWN CAKE 
2/3 stick of butter
2 c. brown sugar
Sliced (canned) pineapple
Maraschino cherries
2/3 stick butter, softened
1 c. sugar
1 lg. egg, room temperature
2/3 c. milk
2 c. sifted flour
2 tsp. baking powder
Pinch of salt
1 tsp. vanilla

In black iron skillet, melt butter, add brown sugar and simmer until bubbling. Place 1 pineapple slice in center - with slices abutting around perimeter. Place cherry in center of each slice. Set aside.

Preheat oven to 375 degrees. Cream together butter and sugar - beat in eggs. Sift dry ingredients and add third at a time, alternately with milk - beating well between each addition - add vanilla.

Pour mixture on top of prepared brown sugar-pineapple mixture. Bake - center of oven for 45 minutes. Invert on platter.
