1 can chick peas (about 14 oz.) 2 lg. garlic cloves 2 to 3 tbsp. Sesame Paste plus some of the oil Lemon juice (1/2 lemon or more, to taste) Freshly ground pepper, to taste Drain liquid from chick peas and set aside. Place chick peas and cut up garlic cloves in processor, along with sesame paste and oil and pepper. Blend until smooth. Add juice of 1/2 lemon, while processing, and slowly add chick pea liquid to desired consistency. Taste and adjust seasonings, adding more lemon juice or pepper, if desired. Should be loose enough to be able to pick up with crackers, or with toasted pita wedges. Keeps well in refrigerator for up to 2 weeks. |
