APRICOT BARS 
1 1/2 c. all-purpose flour (spoon into cup and level with knife)
1 tsp. baking powder
1 c. firmly packed light brown sugar
1 1/2 c. quick rolled oats
3/4 c. (1 1/2 sticks) butter
1 c. apricot preserves or jam

Mix the flour, baking powder, brown sugar and oats in a large mixing bowl. Cut the butter in with a knife or pastry blender until crumbly. (You can also do it in a mixer, if preferred). Pat 2/3 of the mixture firmly into a 13 x 9 1/2 x 2 inch baking pan.

Spread carefully with the preserves. (If 1 cup does not quite cover, use a little more because it is difficult to spread without disturbing the bottom layer.) Sprinkle with the remaining crumb mixture and pat lightly. Bake in a preheated 350 degree oven for 35 minutes. Cool in pan on rack. Cut into bars. Makes about 4 to 5 dozen small bars.
