CHICKEN CACCIATORE 
1 whole chicken breast, skinned & boned
Vegetable cooking spray
1/2 c. chicken broth (bouillon powder)
Bay leaf
2 tbsp. onion, chopped
1 sm. clove garlic, finely chopped
1/4 c. fresh mushrooms, sliced
2 tbsp. green pepper, chopped
1 can Italian tomatoes
2 tbsp. white grate juice
1/2 tsp. dried basil
Pinch of dried thyme
Salt & pepper to taste
2 tsp. minced parsley

Separate chicken breast into halves. Spray a nonstick skillet with cooking spray and heat. Add chicken and brown lightly on both sides. Add chicken broth and bay leaf. Simmer covered for about 10 minutes, turning once or twice, until cooked through. Added onion, garlic, mushrooms and green pepper to skillet. Cover and cook for a few minutes, until onion wilts. Add tomatoes and grape juice, basil and thyme. Simmer uncovered over moderate heat 10 to 15 minutes longer, until sauce thickens. Add salt and pepper to taste. Discard bay leaf. Remove to serving plate and sprinkle with parsley. Makes 2 servings calories per serving 224.
