CHICKEN CACCIATORE 
2 chickens, cut into serving pieces
3/4 c. flour
1 tbsp. salt
1/4 tsp. pepper
1/3 c. olive oil
1 lg. chopped onion
1 clove garlic, minced
1 lg. can Italian tomatoes
1 tbsp. sugar
1 tsp. leaf basil, crumbled
1/2 tsp. leaf thyme, crumbled
2 med. green peppers, halved, seeded and sliced

Shake the chicken with flour, salt, and pepper in a plastic bag. Brown the chicken in the olive oil and remove from pan. Stir in onions and garlic and saute until soft. Add tomatoes, sugar, basil, and thyme; bring to boiling.

Return chicken to pan; spoon some sauce over chicken and lay sliced peppers on top. Cover. Simmer, basting several times with sauce about 1 hour or until chicken is tender. Serve with bow tie noodles.
