CHICKEN CACCIATORE 
2-3 lb. chicken, cut up in pieces
2 tbsp. olive oil
Salt, pepper, oregano, garlic powder to taste
1 onion, diced
1/2 green pepper, diced
1 can tomato paste
2 sm. cans tomato sauce
1 sm. (14.5 oz.) can Italian tomatoes, whole

Brown chicken in oil and spices. Add onion and green pepper. Saute mixture until partially cooked, approximately 15 minutes. Add tomato paste, tomato sauce and whole tomatoes. Stew together for 1/2 to 3/4 hour until tender. Cook, uncovered for an additional 15 minutes, if necessary to boil down sauce to coat chicken.
