CHICKEN CACCIATORE 
4 (10 oz.) chicken breasts, skinned
4 tbsp. onion flakes
1/2 c. sliced mushrooms
1 tbsp. lemon juice
1 tbsp. vinegar
1 tsp. salt
1/2 tsp. pepper
1/4 c. chopped celery
1 tsp. Italian seasonings
1 clove garlic, minced
2 c. tomato juice

Brown chicken in teflon pan, set aside. Combine tomato juice, minced onions, mushrooms, celery and seasonings. Boil to half its volume. Add lemon juice and vinegar. Spoon mixture over chicken. Bake in 325 degree oven for 35 to 45 minutes. Baste every 10 minutes.
