SHRIMP SALAD 
1 1/2 lbs. shrimp
2 med. chopped onions
1 c. chopped parsley
1 c. vinegar
2 sliced boiled eggs for garnish
3/4 c. olive oil
Salt to taste

Boil 2 medium potatoes in water with salt and little before finish add the shrimp for only 10 more minutes.

Have a mixing bowl with 1 cup vinegar. Add the onions and parsley. When finish boiling potatoes and shrimp, drain and peel shrimp and potatoes. Cut the potatoes in small pieces. Add to the mixing bowl. Stir all and add olive oil and salt as needed. Place in platter to garnish with boiled eggs and parsley twigs.
