FRIED EGGPLANT PATTIES 
1/4 stick butter
1 lg. eggplant, cubed in sm. pieces
1 1/2 c. chopped, fresh tomatoes
1 c. chopped red bell peppers (can substitute green)
1 c. chopped onion
2 well beaten eggs
1 tbsp. Masa Harina
1 tbsp. cornmeal
1 tbsp. Harley's Seasoning Mix (or salt & pepper & etc.)

In a 3 quart saucepan, on medium heat, put the first 5 ingredients in the pot in the order listed. Put the lid on the pot. Stir frequently, try not to have to add any water if you can. Watch closely. After it starts to cook, turn the heat to low and continue cooking until the mixture appears to be done. Stir in seasoning mix. Leave the lid off the pot and let cool for an hour or more. (I like to prepare this part one meal before I plan to serve the patties.) Place in refrigerator until ready to fry.

Beat the eggs, add the other 2 ingredients and stir well. This mixture should be pretty thick, you can add a little more cornmeal if you need to. Have a thick skillet on medium heat with a little peanut oil in it. With a serving spoon, place spoonfuls in the pan, let it slowly brown on the bottom side, then turn over and fry on the other side. The trick is to get the right consistency of cornmeal. Serve as a side dish. Tastes nothing like eggplant but is very delicious and nutritious.
