APPLE JELLY 
1 box powdered fruit pectin
3 c. (1 1/2 pt.) bottled apple juice
A few drops red food color
3 1/2 c. (1 1/2 lbs.) sugar

Scald 5 (6 oz.) jelly glasses. In large saucepan, mix pectin with apple juice and enough red food color to tint the mixture light orange. Stir over high heat until mixture comes to hard boil; stir in sugar at once. Bring to full, rolling boil; boil hard 1 minute, stirring constantly. Remove from heat, with metal spoon skim off foam. Fill 5 glasses. Cool and refrigerate.
