CHEF'S MEATLOAF 
1 c. chopped onion
1 c. chopped celery
1/2 c. chopped green pepper
2 c. uncooked oats
2 c. tomato juice
3 eggs, slightly beaten
2 tsp. salt
2 tsp. pepper
1 tsp. dried thyme
3 lbs. ground beef

Saute onion, celery, and green pepper until soft. Mix with oatmeal, juice, eggs, salt, pepper and thyme. Mix in the ground beef. Form into loaf and put into deep pan. Bake for 1 hour at 375 degrees.
