CHEESE ZUCCHINI 
4 or 5 med. zucchini, or use part yellow squash, quartered lengthwise
3 or 4 ripe tomatoes, quartered
1 or 2 thinly sliced onions
1 c. shredded American or other cheese
3 or 4 slices bacon or bacon bits

Spray a shallow 9 x 13 inch baking dish. Combine the ingredients in the following order:

First layer: place zucchini in the bottom of the dish. Sprinkle with garlic salt, oregano, and seasoned pepper.

Second layer: arrange the quartered tomatoes over the zucchini, sprinkling with basil instead of oregano.

Third layer: place the thin sliced onions over all, sprinkling as desired. Fourth layer: cover with the shredded cheese.

Fifth layer: top with bacon slices which have been cut into fourths or add bacon bits. Bake in a 350 degree oven, uncovered, for 45 minutes. Serves 6 to 8.
