ZUCCHINI AND CHEESE 
3 or 4 sm. or 2 or 3 medium zucchini, washed, but unpeeled
1 med. onion, sliced and broken into rings
1 tsp. garlic powder or more according to taste
Seasoned salt
4 oz. Mozzarella cheese
2/3 c. water

Saute: sliced, unpeeled zucchini and onion rings in oil until brown and tender. Add garlic powder and season salt to taste. Add water and simmer 5 minutes. Sprinkle shredded cheese on top. Cover and remove from heat. Let set until cheese is melted.
