FRENCH CRULLERS 
1/4 c. sugar
1/2 tsp. salt
1/4 c. shortening
1 c. boiling water
1 c. sifted all-purpose flour
3 eggs
1 tsp. vanilla extract
Fat fro deep fryer
Confectioners' sugar

Combine sugar, salt and boiling water in a saucepan. Mix and bring to a rapid boil. Add flour all at once and mix until thickened, stirring constantly. Remove from heat. Add eggs, one at a time, beating thoroughly after each addition. Add vanilla. Force mixture then pastry tube into hot (375 degree) fat. Fry until golden brown. Sprinkle with confectioners' sugar. You could make eclairs from same dough.
