RUTH ANN'S CHURROS - SPANISH
CRULLERS
 
1 c. water
1/2 c. butter
1/4 tsp. salt
1 c. flour
3 eggs
1/4 c. sugar
1/4 tsp. cinnamon

Deep frying pan, 1 1/2 inch deep oil for frying.

Heat water, butter and salt to boil. Add flour until mixture forms ball, remove from heat. Beat in eggs. Beat until smooth. Using decorators tube with large star tip squeeze 4 inch strips of dough into hot oil turning once about 2 minutes. Drain on paper towel. Mix cinnamon and sugar. Roll crullers in mixture. Makes approximately 2 dozen.
