SWEET POTATO CASSEROLE | |
4 c. sweet potatoes, cooked and mashed 8 oz. cream cheese, softened 1/2 c. butter, softened 2 eggs, beaten 1/4 c. brown sugar 2 1/2 tbsp. dry sherry 1/4 tsp. salt 3/4 c. black walnuts, chopped 1/2 tsp. nutmeg Preheat oven to 350 degrees. With electric mixer, whip all ingredients, except walnuts and nutmeg, until light. Stir in walnuts and put into a buttered casserole dish. Spread evenly and sprinkle nutmeg over the top. Bake 45 minutes until golden. Serves 8. |
