WHOLE WHEAT MUFFINS 
1/2 c. butter
1 c. brown sugar
1 egg
2 c. whole wheat flour
1 tsp. baking soda
1/4 tsp. vanilla
1 c. milk or water
1 c. chopped nuts, optional

Cream butter and sugar. Add eggs. Add milk and flour alternately. Put in muffin tins and bake at 425 degrees for 12 to 15 minutes.
