HRVATSKE PALACINKE (CROATIAN
CREPES)
 
1 c. milk
3 tbsp. butter
1 c. flour, sifted
1 tsp. baking powder
1/2 tsp. salt
2 eggs, beaten
1/4 c. sugar

Heat milk and butter in saucepan. Cool slightly. Sift flour, baking powder, sugar and salt together. Combine milk mixture, eggs and dry ingredients. Beat until smooth. Batter will be thin. Let batter stand at least 2 hours. Heat a 6 inch skillet, grease lightly with a piece of bacon rind. Pour 1 tablespoons batter in skillet to make a thin pancake. Turn when golden brown. (Can also use crepe pan). Fill with 1 tablespoon cottage cheese filling or lekvar and roll. Place filled palacinke in lightly greased pan. Brush tops with sour cream. Heat in 350 degree oven until hot, approximately 20 minutes.

CHEESE FILLING:

1/2 lb. dry cottage cheese
1 egg
Sugar to taste
