PINTO BEEF CASSEROLE | |
1 lb. ground beef 1 1/2 c. chopped onion 1 1/2 c. chopped green pepper 1 clove garlic, minced 1 (15 oz.) can tomato sauce 2 tsp. chili powder 1 tsp. salt 3 c. cooked rice 1 can pinto beans 1 c. shredded cheese Cook ground beef until browned; drain excess fat. Add onion, green pepper, and garlic and cook until tender. Blend in tomato sauce, chili powder, and salt. In greased 2-quart baking dish, layer meat sauce, 3 cups cooked rice, 1 can pinto beans (drained) and 3/4 cup shredded cheese. Sprinkle with 1/4 cup shredded cheese. Bake in 350 degree oven 15-20 minutes until thoroughly hot. Makes 6 servings. |
