BREAD AND CHEESE OMELET 
1/2 c. bread crumbs
1/2 c. milk
4 eggs
3/4 tsp. salt
1/8 tsp. black pepper
1 tbsp. butter
3 tbsp. cheese (opt.)

Soak bread crumbs in warmed milk. Add the salt, pepper, well beaten eggs, and grated cheese. Have a frying pan heated and melt 1 tablespoon butter in it. Into this pour the egg mixture and place on top of range where it will cook evenly. When nicely browned underneath, place the pan in oven to finish cooking on top. Remove from oven, fold and turn on a hot platter. This makes an excellent lunch or supper dish. While cooking the omelet on top of the range it is well to slip a spatula under the mixture at times, while the bottom is browning to keep it from burning.
