BAKED CHEESE OMELET 
4 to 5 pieces dry bread (buttered on both sides)
5 to 6 eggs, beaten
2 c. milk
Salt & pepper to taste
1/8 tsp. dry mustard (optional)
3/4 lb. grated cheese, your choice

Cover bottom of 9 x 13 inch buttered dish with the bread. Pour on the milk and egg mixture that you have beaten together. Generously put on topping of your choice, then top with grated cheese. Refrigerate overnight. Bake 1 hour at 325 degrees. Cut into squares and serve immediately.

TOPPINGS OF YOUR CHOICE:

1 lb. crisp bacon, cut up or
Finely chopped ham or
Sauteed onion & green pepper or
Combinations of any of the above or any you can think of

Great for company breakfast or brunches.
