JACK CHEESE OVEN OMELET 
8 slices bacon, coarsely chopped
4 green onions, thinly sliced
8 eggs
1 c. milk
1/2 tsp. seasoned salt
2 1/2 c. shredded Jack cheese

Fry bacon until browned. Drain, reserving 1 tablespoon drippings. Saute onions in drippings until limp. Beat eggs with milk and seasoned salt. Stir in bacon, onions, and 2 cups of the cheese. Pour into a greased, shallow 2-quart baking dish. Bake uncovered in a 350 degree oven for 35-40 minutes until mixture is set and top is lightly browned.
