OREGON GRILLED POTATOES 
2 potatoes, scrubbed and sliced 1/4 inch thick
1 med. onion, sliced
1 med. red or green bell pepper, seeded and sliced in strips lengthwise
6 tbsp. butter
Salt and pepper to taste

Place potatoes, peppers and onions in lightly buttered foil. (Divide ingredients into two separate foil wraps). Sprinkle with salt, pepper and butter. Seal tightly. Grill over medium coals approximately one hour.
