ORIENTAL CHICKEN SALAD 
SALAD:

1 head lettuce
3 chicken breasts
1 sm. pkg. slivered almonds, roasted until brown (watch carefully!)
2-3 green onions
Roasted sesame seeds to taste
Rice sticks (as much as you like)
Celery (optional)
Mandarin oranges (optional)
Peanuts (optional)

DRESSING:

4 tbsp. sugar
2-3 tsp. soy sauce
1/2 tsp. black pepper
4 tbsp. vinegar (white or cider)
1/3 c. salad oil

Heat oil, sugar, soy sauce, vinegar and pepper until sugar melts. Whip together and cool. Refrigerate until needed. Shake before tossing (not when hot). Serves 4-5.

Rice sticks are tricky to cook. Be careful. Lots of oil on high heat or just below that. Add rice sticks to hot oil. Make sure both sides puff; if not, turn over. Drain on paper towels.

Sesame seeds can be bought already roasted at most Oriental markets.
