CHINESE CHICKEN SALAD | |
1 head shredded cabbage or iceberg lettuce 3 green onions, chopped 2 tbsp. sesame seeds, toasted 2 tbsp. almonds, slivered, toasted Chopped cooked chicken 1 pkg. Top Ramen noodles (oriental or chicken flavor, crushed in pack by hand) DO NOT COOK noodles - set aside. Save seasoning packet for dressing. DRESSING: 1/8 c. sesame oil 1/8 c. vegetable oil 1/4 tsp. black pepper 3 tbsp. white vinegar 2 tbsp. sugar 1/2 seasoning packet from noodles Toss all prepared salad ingredients. Add dressing. Just before serving, toss with crushed Ramen noodles. (Once tossed with noodles it cannot be saved for later, the noodles get soggy.) Serves 4. |
