APRICOT BARS 
3/4 c. butter
1 c. sugar
1 egg
2 c. flour
1/4 tsp. baking powder
1 1/3 c. coconut, shredded
1/2 c. walnuts, chopped
1/2 tsp. vanilla
1 (12 oz.) jar apricot preserves

In large bowl, cream butter and sugar. Combine flour and baking powder and add to butter mixture. Add coconut, walnuts, and vanilla; mix thoroughly. Press 2/3 of dough into a greased 9 x 13 pan. Spread with preserves, crumble remaining dough over preserves. Bake at 350 degrees for 30-35 minutes or until brown. Cool in pan on wire rack. Yields 36 bars.
