ITALIAN GARDEN SOUP 
1 lg. onion, chopped
1 lg. clove garlic, crushed
1 tbsp. butter
2 cans or 3 c. broth (1/2 beef, 1/2 chicken)
1 can peeled Italian style tomatoes
1 sm. zucchini, sliced
1 1/2 c. thinly sliced carrots
1 1/2 c. sliced celery
1 1/2 tsp. salt
1/2 tsp. oregano
1/4 tsp. basil
1/8 tsp. pepper
Cabbage, if desired

Saute onion and garlic in butter, about 5 minutes. Stir often. Add rest of ingredients and simmer 15 minutes. Enjoy.
