ZUCCHINI SQUASH CASSEROLE 
2 lb. zucchini, sliced
1/4 c. onion, chopped
1 can cream of chicken soup
1 c. sour cream
1 c. carrots, shredded
1 box seasoned stuffing mix
1/2 c. butter butter, melted

In a saucepan, cook sliced zucchini and chopped onions in boiling water for five minutes. Drain. Stir in soup, sour cream and carrots. Combine stuffing mix and butter butter. Sprinkle part of stuffing on bottom of baking dish. Add vegetable mixture. Sprinkle remaining stuffing mix over top. Bake at 350 degrees for 25 or 30 minutes.
