ZUCCHINI JAM 
6 c. peeled grated zucchini
6 c. sugar
1 c. crushed pineapple with juice
1/2 c. lemon juice
6 oz. Jello

Put grated zucchini in a large pan, cook for 6 minutes, drain. In the same pan with the zucchini put the sugar, pineapple and lemon juice, and cook for 6 minutes. Stir in 6 ounces Jello (any flavor). Stir in well. Pour into jars. Refrigerate or freeze. We like orange or cherry flavor Jello best.
