INDIVIDUAL PINEAPPLE UP - SIDE
DOWN CAKE
 
1-2 tbsp. butter
Brown sugar
Cherries (if desired)
1 (9 oz.) pkg. Jiffy yellow cake mix
Sm. can sliced pineapple
1 egg

Drain pineapple into measuring cup. Add water, if needed, to make 1/2 of liquid. Use to prepare cake mix according to package directions.

Place 1 or 2 tablespoons butter in a large custard cup. Melt 30-45 seconds in microwave on full power. Cover with brown sugar; put one pineapple ring in cup with cherry in center. Add cake batter, filling custard cup 1/2 full. Cook 2 - 2 1/2 minutes on full power. Microwaves may vary and it may take 1 or 2 minutes longer. Loosen sides with a knife and turn out onto a plate.

Since microwave ovens vary in power, you may need to adjust your cooking time.
