APPLE MUFFINS 
1/3 c. sugar
1 tbsp. butter, room temperature

Combine two ingredients with pastry knife until crumbly and reserve for topping. Preheat oven to 325 degrees.

1 1/4 c. of firmly packed brown sugar
2/3 c. oil
1 egg
1 c. buttermilk, can make by adding 1 tbsp. lemon or vinegar to 1 c. of milk
1 tsp. baking soda
1 tsp. salt
1 tsp. vanilla
2 1/2 c. flour
1 1/2 c. peeled, chopped apple, any type baking apple
1/2 c. toasted chopped pecans or walnuts

Combine oil, brown sugar, and egg and cream together in large bowl. In another bowl combine buttermilk, soda, salt and vanilla. Blend flour into brown sugar mixture alternately with milk mixture, stirring until just combined. Fold in apples and nuts. Divide into lined muffin tins with muffin papers and sprinkle with topping. Bake at 325 degrees for approximately 30 minutes.
