MOM'S APPLE MUFFIN 
3 1/2 c. all-purpose flour
3 c. peeled, finely chopped McIntosh apples
2 c. sugar
1 tsp. salt
1 tsp. baking soda
1 tsp. cinnamon
1 1/2 c. vegetable oil
1/2 c. chopped nuts, toasted
1 tsp. vanilla

Preheat oven to 350 degrees. Grease and flour muffin pans thoroughly. Combine flours, apples, sugar, salt, soda, and cinnamon (sift dry ingredients). Stir in oil, nuts and vanilla. Batter will be stiff. Fill muffin tins 1/2 to 2/3 full. Makes 24-30. Bake until toothpick inserted in center comes out clean, about 30 minutes.
