APPLE LASSIE CAKE 
6 medium apples (McIntosh or your preference)
1/4 cup molasses
1/2 cup water
1/2 cup vegetable oil
1 cup sugar
1 egg
2 1/2 cups all-purpose flour
1 1/2 tsp. baking powder
1 tsp. salt
1/2 tsp. baking soda
1/2 tsp. cinnamon
cooked apple liquid + milk to make 1 cup

Preheat oven to 350°F. Pare and slice apples. Add molasses and water. Cook together until apples are tender, approximately 10 minutes.

Beat together oil, sugar, and egg. Add rest of ingredients. Pour all liquids off apples into a measuring cup and add milk to make 1 cup of liquid. Add to batter. FOLD in cooked apples. Prepare topping.

TOPPING:

1/2 cup sugar
1 tsp. cinnamon
2 tbsp. butter
1/2 cup chopped walnuts

Mix together with fork or pastry blender. Spread batter into a lightly greased 13x9-inch pan. Sprinkle topping on. Bake at 350°F for 30 to 35 minutes.
