PLUM CAKE COBBLER 
3 1/2 c. (30 oz. can) plums in syrup
3/4 c. plus 2/3 c. sugar
2 tbsp. cornstarch
1/4 c. butter
1 egg, slightly beaten
2 c. sifted flour
3 tsp. baking powder
1/4 tsp. salt
1 c. milk

Drain plums, reserve syrup. Pit plums and arrange, skin side down, in 8x12x2 inch baking dish. Mix 3/4 cup sugar and cornstarch in saucepan. Add reserved syrup and cook, stirring constantly, until clear and thickened. Pour over plums.

Cream butter. Add 2/3 cup sugar and beat until light. Add egg and beat well. Add sifted dry ingredients alternately with milk, beating until smooth. Spread on plums. Bake at 375 degrees for 30 minutes or until done. Serve with whipped cream, if desired. Serves 6.
