ZUCCHINI SAUTE 
1 onion, thinly sliced
1 tsp. chopped garlic
2 tbsp. oil
2 sm. zucchini, cut in 1/4 inch slices
1 med. tomato, chopped
Pinch of dried marjoram
Salt & pepper to taste
Dash of Tabasco
Parmesan cheese

In a large skillet saute onion and garlic in oil, until onion is soft and translucent. Add zucchini, tomato, marjoram, salt, pepper and Tabasco. Saute, stirring frequently, about 5 minutes. Sprinkle with Parmesan cheese and stir for just a few seconds more.
