LIME PICKLES | |
7 lbs. cucumbers 1 gallon water 2 c. pickling lime 2 qts. vinegar 1 tsp. celery seed 1 tbsp. pickling spices 8 c. sugar 2 tbsp. salt Slice cucumbers thin, after washing well. Place sliced cucumbers in a stone jar and cover with a solution of the water and lime. Let stand 24 hours. Stir every couple hours. Drain and wash 2 or 3 times in cold water. Cover with ice water. Let stand 3 more hours. Drain well. Put other ingredients in saucepan and heat until sugar is melted. Pour over cucumbers and let stand overnight. Put cucumbers and solution in pan and boil 35 minutes. Can in pint jars. |
