MASHED POTATO CASSEROLE
(Kathi's)
 
8-10 med. potatoes
2/3 c. sour cream
Salt and pepper to taste
2 tbsp. parsley
1 (8 oz.) pkg. cream cheese, softened
1/4 c. minced onion (less is ok)
2 tbsp. melted butter

Peel and cook potatoes and dry over low heat. Cream sour cream and cream cheese with mixer. Add hot potatoes 1-2 at a time and continue beating. Put in 13x9x2 baking dish. Dot with butter and parsley. Can add bacon bits or Cheddar cheese. Bake at 375 degrees for 25 minutes covered.
